De-Shelling Machine

After De-Husking the next process involved is the coconut shell breaking. Usually its done manually or by using De-Shelling machine which is semi automatic. The tool used to break the shell is a small axe like equipment which is used to chip the shell manually without breading the inner white mask. The semi automatic machines are popular nowadays, which is much faster than manual chipping process. The De-Shelled coconut is then placed in the conveying system which feed into the next process. Coconut shell is a vital byproduct in this process which can be processed into activated carbon or charcoal.

Paring

Paring is the method to remove the coconut testa. Coconut testa is a brown colored outer thin layer covering the coconut kernel. It is a by product which can be used for extracting oil and converting to cattle feed. 90% of the coconut processing industries all over the world use the manual method to remove the testa from the coconut. The tool used to remove the test is like a household vegetable peeler but the size and structure varies. The coconut will looks like a white snow bowl after the testa is removed.

Pre-Cutting

It is a process of breaking the coconut white meat into multiple pieces for further processing. This can be done by a fully automatic machine which requires regular feed. The precutter equipment is made up of a set of stationary blades and a set of moving blades. The moving blades are sharpened to obtain the cut or break. The space between the stationary blades determine the cutting size and various sizes can be obtained by varying the space between the stationary blades. The water from the coconut can be taken separately as a byproduct and used for selling or further processing. The precutter itself has a facility to recover the water separately without contamination.

Water Extraction

Water from the coconut is one of the valuable product which is used for consumption as well as to make other soft drinks. Usually the water is used removed manually but with the available technology, nowadays it can be done via equipment. Storage

The first four process in manufacturing of desiccated coconut requires some manual interference and so it cannot be fully automated. Further process cab be fully automated and also requires a volume regulation depending upon the quantity of the equipment and capacity of the machine. The storage usually happens in a tanks which is called as buffer tank that can be constructed in various sizes depending upon our process capacity. The tank can be used store huge volume of white meat (kernel) after precutting and it can automatically be discharged through screw systems embedded in the tank. The most vital part is that it can control the volume of discharge by varying the speed of the screw system. The benefit of this system is to have a control over the volume of white meat for further processing equipment. Especially the dryer requires more accurate feed rate to attain its specifications.

Washing

Washing is a major concern in the process of producing desiccated coconut. The purpose of washing the white meat is to remove the foreign materials like shell sparks,fibers, minor testa materials and the contamination which occurs while handling the coconut during deshelling and paring. The water is pumped inside the water storage screw and it will be drained once it reaches the maximum color level. Then the fresh water filling occurs in the screw with the help of color sensors and pneumatic arrangements. We can also use drum type washing system and other equipment which can be less water consumable.

Blanching

Blanching cleanses the surface of dirt and organisms, brightens the color and helps retard loss of vitamins. It is a process of passing steam with high temperature to the product with pressure more than atmospheric level. It stops enzymes action which cause the loss of flavor, color and texture. Blanching time of the coconut is very crucial as it should be maintained from 8 minutes to 12 minutes. Usually the blanching system consist of the screw completely scaled with multiple steam inlet jets and a air locked feeding and discharge system. Condensed steam will be a good source to maintain the same moisture level of the product. Hot water blanching is one of the system where coconuts are washed using hot water with maximum temperature of 90 ℃ . Comparatively steam blanching is the most reliable option due to its efficient blanching result.

Pulverizing

Converting the white mask (kernel) into powder form in the wet condition is called as pulverizing. The equipment can be any pulverizer which will be able to process coconut and retrieve the desired size of the particles. Usually they are high powder and extreme RPM machines which can also be called as pin mill.

Dryer

The heart of the plant is the dehydration system, as the process requires very critical resources and operations. The selection of equipment is a vital part as the resources are limited. The process requires hot air as the main source which can be obtained from the steam boiler, water boiler, air heaters and electrical heaters. Two major types of dehydrating system are the vibratory fluidized bed dryers and non vibratory fluidized and tray dryers ( combination).

Vibratory Fluidized Bed Dryers

The dryer is constructed with a single layered bed with multiple perforations and a vibratory source using an eccentric system or a vibro motor. The hot air is passed through the perforated bed through which the material passes. Due to vibration and hot air velocity (2.2 m/s ) the coconut powder fluidized and looses its moisture due to its 100℃ temperature. A exhaust system is placed above the fluidized bed to remove the moist air removed from coconut. The vibratory fluidized bed dryer can only be operated in high temperature, which is suitable for desiccated coconut.

Non Vibratory Fluidized and Tray Dryers

It is a controlled drying system where all the resources can be varied depending upon the requirement. The machine is a three circuit and 3 pass dryer, where the material is passed through, three circuits. The top two circuits consists of trays and the bottom circuit is a fluidized bed. Hot air is the source of drying which has perforations. The coconut material gets dehydrated when the hot air is in contact and passes. Since the dryer has multiple options for varying the settings it can be used for multiple coconut products like desiccated coconut, low fat desiccated coconut, coconut flakes, coconut chips etc.,

Cooling

Desiccated coconut coming out of the dryer holes has a temperature of about 80 ℃ and will be oozing out few quantity of oil. So cooler is used to arrest the oil which is oozing out and to create a good texture to the product. The cold air source is the ambient air which is passed through axial flow fans with minimum pressure.

Lump Breaking

Due to the oil content in the coconut the minor coconut particles gets embedded with each other to form small ball like structure called as lumps. These lumps should be broken to maintain the texture of the product. Automatic machines are used to break these lumps and make the grading process easier.

Grading

It is the process of separating different sizes of desiccated coconut. Usually there are more grades received depending on the pulverizer and the mesh size we use. The mesh is a multiple perforated part in the pulverizer in which we can divide the hole size of our requirement.
